The products, unique and refined in their creation, are suitable for breakfast, for the preparation of desserts, to be combined with cheeses, meat and fish main courses. Raw materials used The ingredients chosen respecting their seasonality and their origin, ensure the creation of a quality product. Many of the raw materials used are PGI and DOP including oranges, cherries from Etna, Leonforte peach, Interdonato lemon, Tropea red onion, prickly pears. Product features Jams, compotes, pates, pickles prepared with fresh seasonal raw materials exclude the use of: Pectin except that naturally contained in fruit Dyes Preservatives Thickeners Derived from gluten. Transformation of the product The transformation of the product and its cooking is carried out at low temperatures and the vacuum is carried out in a controlled atmosphere. This process preserves the color and organoleptic properties of the raw material. The hermetically sealed jars are transferred for steam pasteurization, in order to lower the microbial load and deactivate the enzymes that would compromise the quality and final consistency of the product. The minimum shelf life of our preserves is 24 months.
