TERRITORY: The olive grove is located in Sicily, in the territory of the Municipality of Biancavilla, on the slopes of the Etna Volcano in the province of Catania
OLIVE GROVE: This is a plant located at an altitude of about 650 meters above sea level the soil is highly fertile and volcanic in nature, rich in minerals and natural nutrients. The trees are sparsely located, like the orography of the volcanic soil, as is the case with the Etna area. The land is treated only as permitted by the provisions on biological matters.
CULTIVAR: 95% Etna Nocellar and 5% Moresca
HARVEST: From the second half of October to the first half of November
MILLING: The pressing of the olives, carried out on the same day as the harvest, is done cold; the olives are mechanically crushed and the oil obtained, by centrifugation at a temperature below 27 degrees centigrade, and a variable yield from 12 to 16%
STORAGE: The oil obtained is stored in steel containers, placed in an environment whose temperature is kept constant at 18 degrees centigrade, and after two / three months, once the suspended parts have settled, it is poured into containers (milk, bottles , etc) for the final sale.
ORGANOLEPTIC ASPECTS: Very low acidity level, ranging from 0.20 to 0.30 (UM%), Peroxides, 5 UM meq 02 / kg - Very high polyphenols
SENSATIONS AT THE JUICE: Very fruity nose. Strong aftertaste like natural extra virgin olive oil
