The Pastificio was born in 1992 and your skilled pasta maker went in search of the best strictly Sicilian semolina blends, reaching the top in recent years, obtaining a 100% Sicilian certified semolina pasta; our Pasta is handcrafted with the traditional method and according to the teachings of the ancient pasta makers. It is a long-life "artisan pasta", with a duration of about 24 months from production. The slow bronze drawing process generates a rough and porous product capable of retaining the sauce in the best possible way. The pasta, placed on food frames, is dried inside static cells, at a low temperature of maximum 38 °, this last operation, which allows the maintenance of the organoleptic properties of the product as the pasta itself is dried a lot. .
