There are three main types of cocoa Forastero, Criollo, and Trinitario. The most widely used is Forastero cocoa, constituting 95% of the world production. The Criollo variety is rarer and considered a delicacy (one of the largest producers of Criollo beans is Venezuela). Trinitario cocoa is a hybrid between Criollo and Forastero varieties.
